What party is complete without an amazing cheese dip? This dip is both easy to make and full of flavor. You can control the heat level by increasing or decreasing the amount of Sriracha you use. I originally created this recipe for my blog http://foodyschmoodyblog.com/sriracha-queso-dip/

Made from scratch, this Sriracha queso dip reminds us of something you'd order in a Mexican restaurant. Thick and gooey, we could not stop snacking on this. The Sriracha can be adjusted, but we loved the slight kick and flavor it provides. Green onions on top add a touch of freshness to the dip. This recipe makes enough for a small gathering. If you're having more than a few people over for margaritas, we suggest doubling the recipe.

Ingredients For sriracha queso dip

  • 2 Tbsp
    butter
  • 1 tsp
    minced garlic
  • 2 Tbsp
    all-purpose flour
  • 1 c
    milk
  • 8 oz
    shredded cheese, such as Monterey jack & Colby or similar
  • 2 Tbsp
    Sriracha sauce
  • 2
    scallions, chopped

How To Make sriracha queso dip

If you find the dip too thick, add a few extra tablespoons of milk to thin it out.
  • Cooking garlic in melted butter.

    Heat butter over medium heat in a medium saucepan. Add garlic and cook for 1 minute.
  • Whisking in flour.

    Whisk in flour. Continue to whisk and cook for 1 minute.
  • Stirring in milk.

    Slowly stir in milk and whisk until smooth.
  • Cooking until milk mixture thickens.

    Allow to cook for 3-4 minutes, just until thickening, stirring occasionally.
  • Stirring in shredded cheese.

    Remove mixture from heat and stir in cheese. Stir until smooth.
  • Stirring in Sriracha sauce.

    Then stir in the Sriracha.
  • Dipping a tortilla chip into the Sriracha Queso Dip.

    Garnish with chopped scallions and, if desired, a few extra drops of sriracha. Serve immediately or pour into a small slow cooker. Set to warm to keep until serving.
