Ingredients For spicy queso

    diced onion
  • 2-3
    roma tomatoes, diced
  • 5-6
    serrano chiles, diced
  • 1 c
    pale lager (beer)
  • 1 Tbsp
    oregano, dried
  • 1 tsp
    black pepper
  • 1 tsp
    salt
  • 8 oz
    sharp cheddar cheese, fine shredded
  • 8 oz
    monterey jack cheese, shredded

How To Make spicy queso

    Sauté veggie until they are soft and the onions are translucent in a dash of olive oil over medium heat in a heat resistant fry pan.

    Set oven to broil.

    Add spices, mix.

    Add beer, reduce heat to medium low and simmer until about half of the liquid has cooked away.
  • Cheese dip just before it is broiled

    Add handfuls of cheese to mix and stir constantly until thoroughly melted and blended. Repeat until all the cheese is mixed in.

    Place fry pan in oven uncovered for 5-10 mins. Until slightly browned.
