soup cheese ball
My sister had the Campbell's Creative Cooking with Soup cookbook, (c)1985, and since I was stuck in the states, I copied every recipe for my website. And these are excellent cheese balls! Use 1 item from each option, mix and match at will. Enjoy.

condensed bean & bacon soup

condensed split pea with ham & bacon soup
- CHEESE OPTION - USE 1 ITEM

sharp cheddar, shredded
-
american, shredded
-
monterey jack, shredded
- SEASONING OPTION - USE 1 ITEM

1 clovegarlic, minced
-
1/2 tspdry mustard
-
1/2 tsphot pepper sauce
- COATING OPTION - USE 1 ITEM

fresh parsley, chopped
-
walnuts, chopped
-
corn chips, finely crushed
How To Make soup cheese ball

1To a medium mixing bowl, add the Soup Option, salsa, Cheese Option, and Seasoning Option. (For this one, I used the bean with bacon soup, cheddar cheese, and garlic.)

2Beat on low speed with an electric mixer until smooth as possible.

3Lay out a large piece of plastic wrap, place cheese mixture in the center. Pull the corners and sides of the plastic wrap up and over the top, covering the mixture completely, and shape into a ball. Place in a bowl and place in the fridge for at least 4 hours or overnight.

4When ready to serve, lay out a piece of parchment paper, add the Coating Option and spread out. Take ball out from fridge, remove plastic wrap and shape again into a ball. Roll the ball in the coating until well covered.

5Place ball on a serving tray, surround the ball with assorted crackers. Serve and enjoy. This one I made using the condensed bean with bacon soup, rolled in fresh parsley. Excellent cheese ball!

6And this one I made with the split pea soup and cheddar cheese, and rolled in walnuts. Also an excellent cheese ball.
