For an easy supper and something different I like an "open-faced sandwich". When I was a teenager there was a great little restaurant on Circuit Ave., in Oak Bluffs, Ma. on the island of Martha's Vineyard that served this sort of food,it was called Frosty Cottage. They served ice cream,burgers and an assortment of take-out food.

Ingredients For piccadilly circles
- MAKE A WHITE SAUCE

2 Tbspbutter

2 Tbspflour
-
1 cmilk
-
1 1/4 cgrated cheese, either swiss or cheddar

1 smchopped green bell pepper,or choose your favorite for color
-
1/4 tspgarlic powder
-
1/4 tspsalt if desired; may not need it with cheese

1/2 cboiled ham, sliced and diced

6english muffins, toasted lightly
- AFTER TOASTING MUFFINS PLACE ON COOKY SHEET, SPREAD WITH SAUCE
How To Make piccadilly circles

1Most of the prep-time is chopping cheese,green peppers and ham; the sauce might take five minutes; and broiling time might be five minutes. Watch carefully, broil until cheese sauce is golden brown.

2You may prefer to use good sliced bread, or those small slices of party rye bread instead of English muffins.
