These little peppery cheese bites go over big at all get-togethers. For a milder version, simply reduce the amount of jalapeño peppers and omit using the cayenne. Recipe from Wisconsin Milk Marketing Board, Inc.

Ingredients For peppery potluck squares

  • cornmeal (for dusting pan)
  • 2 c
    sharp cheddar cheese, shredded
  • 1 c
    sharp cheddar cold pack cheese, softened
  • 1 c
    parmesan cheese, grated
  • 1/4 tsp
    garlic powder
  • 1/4 tsp
    dried oregano
  • 1/4 tsp
    ground cumin
  • 4 lg
    eggs, beaten
  • 1 jar
    (2-oz) pimentos, sliced
  • 1 can
    (4-oz) jalapenos, drained and chopped
  • cayenne pepper, to taste

How To Make peppery potluck squares

    Preheat oven to 350°F (175°C). Butter a 9-inch square pan. Sprinkle cornmeal in pan, coating pan well.

    Cream cheeses until well-blended; add garlic powder, oregano and cumin. Beat in eggs. Stir in pimentos and jalapeños. Add cayenne pepper; mix ingredients well.

    Spread mixture in pan, smoothing top.

    Let stand 10 minutes before cutting into bite-size cubes. Serve warm or at room temperature.
