1Preheat the oven to 400. Line two baking sheets with baking parchment. Grate the cheese using a fine grater, pulling it down slowly to make long strands.

2Spread the grated cheese in 3-3 1/2 inch rounds on the baking parchment, forking it into shape. Do not spread the cheese too thickly; it should just cover the parchment. Bake for 5-7 minutes or until bubbling and golden brown.

3Leave the tuiles on the baking sheet for about 30 seconds and then carefully transfer, using a metal spatula, to a wire rack to cool completely. Alternately drape over a rolling pin to make a curved shape.
