mini bell pepper & feta muffins
I found this recipe in a Greek food magazine in 2015 Made these muffins for a party I had. All my guests loved them, they disappeared in no time. I've been asked to make them quite often. So translated and I'm glad to be sharing with you.to enjoy also.

Ingredients For mini bell pepper & feta muffins

1roasted red pepper (jar) pat dry & dice

1 call purpose flour, shifted with baking powder

2 tspbaking powder, shifted with flour

1any color bell pepper, diced
-
1 tspsalt, maybe less due to feta cheese
-
2 tspparsley, finely chopped
-
2/3 cmilk
-
1/2 cbutter, melted & lukewarm
-
1egg
-
1/2 cfeta cheese, crumbled
-
freshly ground pepper
How To Make mini bell pepper & feta muffins

1Preheat oven at 33o degrees. Prepare 30 mini muffin cups, with mini muffin liners or grease & flour your muffin pan.

2With kitchen paper towel pat dry roasted pepper & dice. Shift flour & baking powder. Add peppers, salt & parsley.

3In another bowl whisk together the milk, butter & egg to combine Pour the wet ingredients in the center of the dry ingredients. With a wooden spoon or spatula lightly fold the wet ingredients into the dry ingredients to combine. Don't overmix.

4Half fill the muffin cups with the batter, add the feta cheese & then cover with some batter.

5If making mini muffins bake 12-15 minutes, till toothpick comes out clean. Let cool & ENJOY!

6TIP:: 1. If you don't have a miNi muffin pan you could use a regular muffin pan, where you will make 15 muffins, like my picture.
