Jumped at the chance to enter the weekly contest that Vanessa's (Pies, Pies, and More Pies) group has each week. This week it is for mini appetizer pies. My mind went immediately to savory, tasty, and easy to do. Oh yes, as well as very delicious. My husband gave them a big smile and thumbs up this morning when I pulled them out of the oven. Thanks for the opportunity to share.

Not only are these mini meat pies adorable, but they're also delicious too. The crust is flaky and easy to make. It's filled with browned ground beef, onions, and seasonings. An egg custard holds everything together once baked. When topped with cheese, these meat pies taste like a two-bite cheeseburger. A great appetizer for a party, but you could eat them for a lighter dinner too.

Ingredients For mini appetizer ground beef pies

  • FILLING
  • 1/2 lb
    ground beef
  • 1/3 c
    onion, finely chopped
  • dash
    salt
  • dash
    cayenne pepper
  • 1 Tbsp
    I use a dried mixture combination of red & green bell peppers, granulated garlic, and black pepper, but you could use finely diced small amounts of these
  • PASTRY
  • 1 c
    biscuit/baking mix
  • 1/4 c
    cornmeal
  • 1/4 c
    cold butter
  • 2-3 Tbsp
    hot water
  • EGG MIXTURE
  • 1 lg
    egg
  • 1/4 c
    whipping cream
  • 1/4 c
    milk or 1/2 cup of half and half
  • TO TOP IT OFF
  • 1/2 c
    cheddar cheese, finely grated (I have used 3 hot pepper cheddar to spice it up)

How To Make mini appetizer ground beef pies

  • Prepping a mini muffin tin while the oven preheats.

    Grease a mini muffin pan and heat the oven to 375 degrees.
  • Seasoning added to browned ground beef.

    Saute onion and ground beef until the beef is fully cooked. Drain and add 1 Tbsp of dried seasoning mix (or a combination of fresh bell peppers, garlic, and black pepper). Set aside.
  • Pastry crust pressed into mini muffin tin.

    Make the pastry by blending the biscuit mix and the cornmeal with the butter until it is like fine crumbs. Add water tablespoon at a time until an easy-to-handle dough. Press into your mini muffin pan. Mine only made about 18.
  • Hamburger meat spooned on top of crust.

    Fill with the hamburger mixture.
  • Egg mixture poured over filling and topped with cheese.

    Whip the egg and milk/cream mixture with a fork until it is combined. Spoon into your hamburger-filled pies and then top it off with the grated cheese.
  • Mini beef pies baking.

    Bake for about 20 minutes until a toothpick inserted comes out clean.
