Ingredients For mediterranean dip

  • 1/2 c
    black olives, sliced
  • 1/4 c
    pine nuts
  • 1/4 c
    sun-dried tomatoes, packed in oil, drained & finely chopped
  • 3 clove
    garlic, minced
  • 1/4 c
    fresh basil, chopped
  • 1 md
    tube goat cheese
  • 2 Tbsp
    olive oil
  • 1 tsp
    fresh cracked black pepper
  • baguette slices

How To Make mediterranean dip

  • 1
    Toast pine nuts in a non-stick pan over low heat. Watch the pan carefully as the pine nuts burn easily. This should only take a minute or two.

    In a bowl, combine olives, pine nuts, sun-dried tomatoes, garlic and basil. Add the goat cheese, mixing slightly. Don't over-mix. Pour olive oil over top and then add cracked black pepper.

    Serve with baguette slices.
