These are so nice to serve for St. Patrick's Day. They are simple to make and everyone seems to love them. A friend gave me this recipe last year and I make them whenever I need to take an appetizer to a dinner.

Ingredients For little reuben appetizers

1 pkgappetizer size deli rye bread

1 cprepared thousand island salad dressing

1/2 lbdeli style corned beef, sliced thin

1 pkgsauerkraut, from deli or canned, well drained

1/2 lbthinly sliced swiss cheese
How To Make little reuben appetizers

1Preheat oven to 350 degrees. Separate bread slices and spread out on an ungreased cookie sheet.

2Prepare each bread slice by first spreading with Thousand Island dressing, next place a slice or two of corned beef on top of bread, top with a tablespoon of sauerkraut, finally place a square of Swiss cheese on top of everything.

3Bake for 10 to 12 minutes or until cheese is melted and bubbly. Serve warm from the oven.
