liptauer käse (liptoi cheese spread)

My Polish uncle shared this recipe with my German mother, and it is considered an Austrian appetizer although the area known as Liptau is in Slovakia! Multi-national treat! I make it every year around the winter holidays - Christmas parties and gatherings, New Year's Eve feasts, etc. If you don't want to use beer, can substitute water, but beer is better and more authentic!

Ingredients For liptauer käse (liptoi cheese spread)

  • 8 oz
    low-fat cream cheese, softened
  • 1/4 c
    low-fat sour cream
  • 2 oz
    butter, softened
  • 2 tsp
    anchovy paste
  • 2 tsp
    capers (chopped if using large ones)
  • 2
    green onions, chopped fine, include most of green
  • 1/8 tsp
    salt
  • 1 Tbsp
    paprika
  • 2 Tbsp
    caraway seeds
  • 1/2 tsp
    dry mustard
  • 1-2 oz
    beer (drink the rest!)

How To Make liptauer käse (liptoi cheese spread)

    Put all ingredients in blender or food processor. I start with one ounce of beer and only add a bit more if it seems too dense. The consistency should be thicker than dip.

    Use a cocktail knife to spread on small slices of rye bread. Saltines would work, but are not as traditional.
