This is a recipe found several years ago in a church cook book. I am not sure where or who made this recipe, but here is my way and how I like to design it for my Christmas Eve party.

How To Make holiday beef ball, jamie's way

To make a snowman with this recipe I doubled the recipe. Let the cream cheese come to room temp.

Finely chop the onion, nuts of your choice, I used walnuts, and finely chop the dried beef.

Place the cream cheese in the bowl and add all the ingredients and mix well. Form into two balls for the body and one the size of a head for your snowman. I did roll mine up in nuts too but you can omit that if you prefer to have nuts only on the inside.

Place you balls on a plate then decorate with olives and small pretzels for arms. I used a very small carrot for the nose and I also wrapped a slice of pimento around the neck for a scraf. I found the little hat in a specialty store and glued the little bird on top of hat. Michaels had these items several years ago.
