This really tasty appetizer recipe takes the flavors of a Reuben sandwich and wraps them inside flaky puff pastry. Once baked, the puff pastry gets nice and crispy. An easy football appetizer because you can scale the recipe depending on how many people come over to watch the game.

Ingredients For first down reuben rounds

  • 1
    puff pastry sheet, thawed
  • 1 tsp
    caraway seeds
  • 1/2 c
    sauerkraut, well drained
  • 4 slice
    Swiss cheese
  • 3 slice
    deli corned beef
  • 1/4 c
    Thousand Island dressing

How To Make first down reuben rounds

  • Unrolled and thawed puff pastry.

    Preheat oven to 400 degrees and unroll pastry sheet onto large baking sheet that has been sprayed wtih cooking spray.
  • Swiss cheese, corned beef, and sauerkraut on top of the puff pastry.

    Lay Swiss cheese on the pastry sheet. Then top with corned beef and sauerkraut.
  • Puff pastry rolled.

    Roll up starting with the long sides.
  • Puff pastry sliced and placed on a baking sheet.

    Cut into 1/4" rounds and place 2" apart on the baking sheet.
  • Puff pastry baking in the oven.

    Bake for 10 minutes. Remove and sprinkle with caraway seeds. Return to the oven baking another 5 minutes.
  • Dipping First Down Reuben Rounds in Thousand Island dressing.

    Serve with Thousand Island dressing as a dipping sauce.
