Diane Kruse Ferris was my college room mate, years ago, a Home Ec major. We had a co-op room at Ruby Mason Hall where we cooked our own meals and did our own cleaning. Not like a dorm back then where you got meals and a cleaning lady. :) Diane often made these for snacks. They were quick, easy, and yummy. Also inexpensive so we could make a ton of them to share with others in our hall. If you are out there somewhere, Diane, email me!

Ingredients For diane's bread canapes

1/2 cmayonnaise
-
1/2 cparmesan cheese, grated

1 smonion, finely minced

1 pkgsmall party rye bread (about 8 ounces) or small bread of your choice

or any other bread of your choice cut to bite sized pieces

parsley for garnish, optional
How To Make diane's bread canapes

1Preheat broiler. Combine mayonnaise, Parmesan cheese, and onion. Mix well. Spread generously on bread slices Place prepared bread on cookie sheet and place under broiler for a few minutes. Watch carefully. Appetizers should get bubbly and slightly brown. Do not over cook. Remove from oven and let sit for a couple of minutes so you won't burn your mouth. Serve warm with parsley garnish if desired.

2NOTE: You can use any small bread of your choice or cut out shapes with cookie cutters for holidays or special occasions.
