Wonderful, easy appetizer recipe for spreading on crackers, Melba toast, cocktail bread, or even raw veggies. Great for Thanksgiving or holiday parties.

This is a different type of spread recipe if you're a fan of goat cheese. The flavor of the cheese is mellowed out a little by all the other flavors. The tangy vinaigrette is a perfect complement to the goat cheese and cream cheese. Tart cranberries and nutty pine nuts in each bite are little bits of yumminess. At room temperature, the texture is similar to hummus. We tried a few crackers and preferred the Melba toast. A sweeter, buttery cracker is also a great option. It's an unusual appetizer recipe that will be a delicious start to a holiday dinner.

Ingredients For cranberry goat cheese spread

1/4 cpine nuts
-
4 ozchevre (soft goat cheese, usually sold in a log shape)

3 Tbspplain cream cheese (about 1.5 oz)

1/4 cdried cranberries
-
3 Tbspbalsamic vinaigrette salad dressing (store-bought or homemade)

1/8 tspsalt
-
freshly ground black pepper to taste
How To Make cranberry goat cheese spread

1Toast the pine nuts. Place on a sheet of aluminum foil and roast in a toaster oven or regular oven at 300 F for about 2 minutes, just until nicely golden brown. Remove.

2Place toasted pine nuts and all other ingredients into a food processor. Process until mostly smooth.

3Place in a pretty serving dish. Serve immediately or refrigerate (which will thicken spread somewhat).

4Serve with crackers, Triscuits, slices of cocktail bread, Melba toast, or cut up veggies of your choice.
