Ingredients For chile con queso mini-bites

1/2 ctomato, chopped

1 cangreen chiles, rinsed and drained

1/8 tspred pepper

1/2 tspcumin
-
1 tspchili powder
-
1/2 cmonterey jack cheese with jalapeno peppers

1/2 ccheddar, grated
-
4eggs, beaten
-
1garlic clove, minced
-
1/4 cgreen onion, minced

green chiles, whole
How To Make chile con queso mini-bites

1Coat a nonstick skillet with cooking spray; place over medium-high heat until hot.

2Add tomato, green onions and garlic.

3Saute until onions are tender.

4Combine tomato mixture, eggs, cheeses, chili powder, cumin, red pepper and chopped green chiles and stir well.

5Spoon 1 tablespoon of the mixture into miniature muffin pans coated with cooking spray.

6Bake at 425 For 8-10 minutes or until centers are set.

7Remove from oven; let cool in pans 1 minute.

8Loosen edges with knife and remove from pans and serve warm.

9Garnish with sliced green chiles if desired.
