This appetizer is wonderful. I have to make a double batch every time I make these.. I make these for Superbowl parties..they are always a main attraction...nothing hard about making them either...just buy a rotisserie chicken, fries, cheese, and you have a wonderful treat that will be sure to please.. Try them you'll love them! My pics.

Ingredients For cheesy bacon - chicken fries

2 1/2 cfrozen cottage fries (half of 2-lb bag) i used waffle fries...they work well also

1 1/2 cchopped or shredded deli rotisserie chicken (without skin)

1 1/2 cshredded, cheddar cheese

1/4 cmayonnaise
-
1/2 tspgarlic powder
-
1/2 tspchili powder, i use hot mexican chili powder

1/2 cchopped, precooked bacon..i used hormel bacon pieces

4scallions, sliced, plus the ends ( optional)

csour cream, salsa for dipping, or whatever sauce you prefer
How To Make cheesy bacon - chicken fries

1Heat oven to 450 degree F. Line 15x10x1-inch pan with foil. Bake cottage fries as directed on bag. About 20 minutes. Note: I made these without lining with foil..I just sprayed the pan with cooking spray..they turned out fine..

2Meanwhile, in small bowl, mix chicken, mayonnaise, garlic powder and chili powder.

3Sprinkle 1 cup of the cheese evenly over the hot fries.

4Spoon chicken mixture evenly over cheese. Sprinkle with remaining cheese and the bacon.

5Bake 3 to 5 minutes longer or until cheese is melted. Sprinkle on the scallions, serve with sour cream or your favorite dipping sauce. These are so flavorful, and quite satisfying...serving a lot of people? Double the recipe. I used a whole bag of the fries, and doubled the rest of the recipe..
