cheese straw cookies

These make a great hors d' oeuvre. They almost taste like cheese straws but with a crunch. My friend, Mary Lou, shared this recipe with me about 30 years ago and I have been making them ever since.

Ingredients For cheese straw cookies

8 ozsharp cheddar cheese, cold

2 stickbutter or margarine, frozen

2 call purpose flour

1/8 tspsalt

1 Tbspcayenne pepper (or less)

2 crice krispies cereal
How To Make cheese straw cookies

1Grate the cold block of cheddar cheese and the cold sticks of butter into the same large bowl. Let this come to room temperature to soften. NOTE: I have also used pre-shredded cheese, put it in a bowl along with the butter and let it come to room temperature. Once it has softened I start mixing in the remaining ingredients. This works just as well.

2Form several rolls of dough. Pinch off small pieces and form into quarter-sized balls. Place onto a lightly greased cookie sheet (I line mine with foil or parchment paper) then flatted each ball with a fork.

3Bake for approximately 15 to 20 minutes or until lightly browned. Do not over bake do they will be too hard.
