Ingredients For cheese and chive croquettes

  • 1 lb. grated mozzarella cheese
  • 1 1/2 cups flour
  • 4 tbsp. snipped fresh chives
  • 1/2 tsp. cayenne pepper
  • 2 eggs, lightly beaten
  • 1/2 cup cornstarch
  • vegetable oil for deep frying

How To Make cheese and chive croquettes

    Put mozzarella cheese, 1 cup flour, chives, cayenne pepper and eggs in bowl. Mix to combine. Shape mixture into balls, put on plate lined with plastic food wrap and refrigerate for 30 minutes.

    Mix cornstarch and remaining flour on plate. Roll balls in flour mixture and chill for 10 minutes. Heat oil in pan til a cube of bread dropped in browns in 50 seconds, and deep fry croquettes, in batches, for 4 to 5 minutes or til golden. Drain on absorbent kitchen paper and serve. Makes 24.
