Wow, this caramelized onion and goat cheese tart is quite tasty. It's rich with a fantastic combination of flavors. Adding thyme to the caramelized onions gives the onions an aromatic sweetness that's well complemented by the tangy goat cheese and salty, crunchy bacon. The texture and butteriness of the puff pastry puts this tart over the top.

Ingredients For caramelized onion and goat cheese tart

  • 2 lg
    Spanish onions, about 1 lb
  • 1 sm
    package of goat cheese, 4 oz.
  • 8 slice
    thick sliced bacon
  • 1 sprig
    fresh thyme
  • 1/2 stick
    unsalted butter
  • 1 sheet
    frozen puff pastry
  • 1 tsp
    kosher salt
  • 1/2 tsp
    cracked black pepper

How To Make caramelized onion and goat cheese tart

  • A box of puff pastry ready to thaw.

    Preheat oven to 425 degrees F. Thaw puff pastry in the refrigerator for 1-2 hours.
  • Dicing the bacon.

    Dice bacon.
  • Rendering the bacon in a skillet.

    Render in a pan until crispy.
  • Cooked bacon on a paper towel.

    Remove from pan and drain on a paper towel.
  • Slicing the onions.

    Cut onions into slices.
  • Melting butter in a skillet.

    Melt butter in a large skillet.
  • Cooking onions in the melted butter.

    Add onions. Cook on medium heat, stirring occasionally for approximately 30 minutes to caramelize.
  • Thyme, salt, and pepper added to the onions.

    Add the fresh thyme at the end of cooking. Salt and pepper to taste.
  • Letting the caramelized onions cool.

    Once caramelized, remove from heat and let cool.
  • Sprinkling flour on the work surface.
