Never one to back down from a challenge, here is my Ninja dish for this week using : Feta Cheese, Hot sauce, and Captain Crunch Cereal. Captain's Log: Star Date 2011 May not be "Out of this world" but it is good tasting on crackers. :)

Ingredients For captain's log: star date 2011

  • 2 c
    captain crunch cereal (original flavor)
  • COATING MIX
  • 2 Tbsp
    butter, melted
  • 1 Tbsp
    worcestershire sauce
  • 1/4 tsp
    seasoning salt, may omit if desired
  • 3 dash
    hot sauce, your choice
  • 1 to 2 pinch
    fresh ground pepper
  • 1/4 tsp
    garlic powder
  • 1/2 tsp
    ground cumin
  • 1/4 c
    grated parmesan cheese
  • CHEESE LOG MIX
  • 2 oz
    feta cheese
  • 1 oz
    blue cheese
  • 4 oz
    cream cheese
  • 4 to 6 oz
    cheddar and colby jack, fine shred
  • 1 to 2 dash
    hot sauce
  • 3 Tbsp
    red bell peppers. finely chopped
  • 2 Tbsp
    yellow bell pepper, finely chopped
  • jalapenos, fresh, finely chopped (to taste)
  • 1 Tbsp
    durkee's famous sauce (or a mild mustard)
  • 1 Tbsp
    flat leaf parsley, finely chopped
  • 1 tsp
    smoked paprika or chili powder

How To Make captain's log: star date 2011

    Melt the butter in a medium size microwaveable bowl and add all coating seasonings. Stir well. Add the Captain Crunch Cereal and stir to coat. Place bowl of ingredients in microwave and microwave for 2 minutes on 30 percent power, stirring every 30 seconds. You should see some slight browning on the cereal, but if not, microwave in 20 second intervals on 30% power, stirring after each interval. (Microwaves vary, so watch this step carefully) Remove from microwave and stir to cool to prevent overbrowning.

    In a second bowl, allow cream cheese to soften to room temp. Crumble feta and blue cheese into bowl and add cheddar/colby jack and hot sauce. Add all chopped peppers, parsley and Durkees Famous Sauce. Mix very well to form a cohesive mass. Place the mixed cheeses on waxed paper or plastic wrap and form into a tight log. Wrap and refrigerate for at least one hour or until set.

    Crush the Captain Crunch cereal mix to small crumbs and place in a shallow dish. Unwrap the cheese log and sprinkle the outside with smoked paprika or chili powder to cover lightly. Then roll the log in the crushed cereal mixture to coat well. Place on serving plate, cover with wrap and refrigerate until ready to serve. Let come to room temp to serve with assorted crackers.
