beet and goat cheese appetizers
This recipe is a great appetizer with wine and olives. If you love goat cheese, as i do, This will make your pallet very happy!

Ingredients For beet and goat cheese appetizers

1 canpillsbury home style biscuits

1 cansliced beets
-
1/2red onion sliced thin
-
1/4 capple cider vinegar

1/3 ccanola oil
-
1 Tbsporegano, dried
-
3 Tbspwater
-
1small log goat cheese
-
1 colive oil for brushing
How To Make beet and goat cheese appetizers

1In a large bowl add canola oil, Apple cider vinegar, 3 tbsp of water and 1 tbsp of oregano. Salt and pepper to taste. Mix well. Add beets and sliced red onion.set aside.

2Preheat oven 375. Open pillsbury biscuits and separate each biscuit in two. Place each half into muffin pan pressing into pan. Brush with olive oil and sprinkle lightly with oregano. Place in oven for 10 minutes until lightly brown.

3While biscuits are in oven, place beets in small chopper a tablespoon at a time (about half) and chop just slightly s you still have small pieces.

4Remove biscuits from oven. Make indent with a small spoon in center of each biscuit. Now fill with beet mixture (about 1/2 teaspoon each). Then place crumbles of goat cheese on top. Also, about half teaspoon of cheese. Brush with olive oil again and sprinkle with dried oregano. Bake another 15 minutes until brown and crispy. Can be served with more olive oil or olives. Enjoy!
