These are insanely good. the cream cheese off sets the saltiness of the beef, and the gherkin adds an unexpected crunch. I make these all the time and the recipe was given to my by a very dear friend more than 30 years ago

4.50 oz( 2- 2.25 ounce) jar dried beef slices

8 ozcream cheese, softened to room temp.

24 smsweet gherkins

1Spread each slice of beef with about 2 teaspoons cream cheese.

2Put a sweet gherkin in the middle.

3Roll up and slice crosswise.
