4 Tbspsour cream

1 tspdijon mustard (i prefer grey poupon)

1 mdrusset potato

3 Tbspolive oil, extra virgin

salt, kosher variety, to taste

black pepper, freshly ground, to taste

4 ozcheddar cheese, shredded
-
4 ozprovolone cheese, thinly sliced
-
4 slicebacon, diced and cooked
-
2 Tbspchopped green onion, just the green part
How To Make awesome loaded potato round appetizers

1PREP/PREPARE

2Gather your ingredients.

3Mix the sour cream and dijon mustard together in a small bowl, and reserve.

4Place a rack in the middle position, and preheat the oven to 400f (205c).

5Cut the potato into even 1/4-inch (.6cm) rounds.

6Add the olive oil, salt and pepper to a small bowl.

7Add the sliced potatoes, and toss to evenly coat.

8Place on a parchment-lined baking sheet.

9Bake in the preheated oven until cooked through and starting to brown, about 20 – 25 minutes.

10Remove from the oven and reserve.

11Chef’s Note: Leave the potatoes on the baking sheet.

12Add some provolone cheese.

13Add some cheddar cheese.

14Add some diced bacon.

15Pop under a broiler until the cheese is bubbly, about 2 – 3 minutes.

17Garnish with some green onion, and top with some sour cream mix. Enjoy.
