Ingredients For artichoke nibbles

2 6oz. jarmarinated artichoke hearts

1small onion diced

4eggs beaten
-
1/4 cupfine breadcrumbs

1/4 tspsalt

1/4 tsppepper
-
1/8 tsporegano, dried
-
2 cshredded sharp cheddar
-
2 Tbspparsley flakes
-
1 tspgarlic powder
How To Make artichoke nibbles

1Preheat oven to 325 degrees. Drain one jar of marinade artichoke hearts into medium skillet, add chopped onion and saute for 5 minutes. Discard second jar of marinade. Chop artichoke hearts into small pieces.

2In a separate bowl combine eggs, breadcrumbs,salt,pepper. Fold in cheese and parsley. Add artichokes and sauteed onions mixture, and blend well.

3Pour into 9 inch greased glass baking dish. Bake 30 minutes. Allow to cool briefly before cutting into squares. (Can be served cold).
