appetizer essentials: yummy stuffed olives

I do a lot of appetizers… some uber fancy, like butter-sautéed crab in Pâte Brisée cups, but, when I make this one, it really gets gobbled up. The filling; along with the cream cheese, is a perfect compliment to the saltiness of the green olives, and the cayenne gives it just enough of a kick to make it unforgettable. So, you ready… Let’s get into the kitchen.

Ingredients For appetizer essentials: yummy stuffed olives

  • PLAN/PURCHASE
  • 12 lg
    green olives, pitted
  • THE FILLING
  • 1/4 c
    cream cheese, room temperature
  • 2 tsp
    parmesan cheese, finely grated
  • 2 oz
    prosciutto, thinly sliced, and chopped
  • 1 tsp
    hot sauce, i prefer frank’s
  • 1 pinch
    cayenne pepper, or to taste

    PREP/PREPARE

    Gather your Ingredients (mise en place).

    Combine the filling ingredients, and check for proper seasoning.

    Add to a pastry bag, or place into a Ziploc back, and cut off the corner.

    Pipe into the olives, and then keep cool in the fridge until ready to serve.
