appetizer essentials: yummy stuffed olives
I do a lot of appetizers… some uber fancy, like butter-sautéed crab in Pâte Brisée cups, but, when I make this one, it really gets gobbled up. The filling; along with the cream cheese, is a perfect compliment to the saltiness of the green olives, and the cayenne gives it just enough of a kick to make it unforgettable. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE

12 lggreen olives, pitted
- THE FILLING

1/4 ccream cheese, room temperature

2 tspparmesan cheese, finely grated

2 ozprosciutto, thinly sliced, and chopped

1 tsphot sauce, i prefer frank’s

1 pinchcayenne pepper, or to taste

2Gather your Ingredients (mise en place).

3Combine the filling ingredients, and check for proper seasoning.

4Add to a pastry bag, or place into a Ziploc back, and cut off the corner.

5Pipe into the olives, and then keep cool in the fridge until ready to serve.

7Place on a plate, serve to your guests, and stand back. Enjoy.
