appetizer essentials: feta/tomato dip

I had some extra feta cheese that I needed to use, so I mixed it with tomatoes and a few other bits-and-bobs and came up with this yummy recipe. It is easy/peasy to assemble, and the flavors are awesome. So, you ready… Let’s get into the kitchen.

Ingredients For appetizer essentials: feta/tomato dip

  • 14 oz
    petite diced tomatoes, drained
  • 3 Tbsp
    extra virgin olive oil
  • Kosher salt, to taste
  • freshly ground white pepper, to taste
  • 6 oz
    crumbled feta cheese
  • 2 oz
    cream cheese, cut into 4 pieces
  • 2 clove
    garlic, minced
  • OPTIONAL ITEMS
  • 1 - 2 pinch
    red pepper flakes
  • lemon juice

    What will you need? You will need a small ovenproof skillet, if you have a cast iron skillet, use it; however, because of the acidic nature of tomatoes, the skillet needs to be well seasoned.

    Variations If you want to change it up, add about 6 ounce of fully cooked ground beef or pork to the dish before placing it into the oven. I did that and served it over pasta… yummy.

    How to store it? This will keep in the fridge, covered, for about 3 – 4 days. However, because of all the cheese, it does not freeze well.

    Gather your ingredients (mise en place).

    Place a rack in the middle position and preheat the oven to 360f/180c.

    Add the drained tomatoes to a bowl, then stir in the olive oil, salt, and pepper.

    Place the tomato mixture into an ovenproof skillet.
  • 9
    Add the feta to the center of the tomatoes

    Place the cream cheese around the feta.

    Chuck it into the oven for about 30 minutes.

    Increase temperature to 400f/205c and continue to bake until the feta begins to color, about another 2 - 3 minutes.

    Remove from the oven and stir in the minced garlic until the cheeses and tomatoes are perfectly combined.

    At this point I like to add a squeeze or two of lemon juice, and another sprinkle of salt.
