These were so easy and delicious..my son and husband were eating them before I told them they were for club Bunko...I did manage to save them in time though..will have to make more soon..these will be great for St. Patrick's Day!

Ingredients For reuben cocktail appetizers

20 sliceparty cocktail rye bread,flatened

1/2 cthousand island salad dressing( more or less)

2 pkg2 oz. each budding original corned beef slices
-
1/2 csauerkraut, drained,pat dry

12 sliceswiss cheese,divided
How To Make reuben cocktail appetizers

1Heat oven to 350^. With a rolling pin-flatten each slice of the bread and place on a cookie sheet. Bake in hot oven for 6 minutes then turn over each slice and bake for 6 more minutes. Remove from oven to cool.(leave oven on)

2Spread slices with thousand island dressing.

3Top each with a thin slice of corned beef(I used Budding original corned beef-two 2 oz. pkgs.) Fold each piece of meat in half then in half again.

4Cover each with sauerkraut(about 1 Tablespoon each)

5Cut the cheese slice to fit the bread and cover the sauerkraut..You can cut an exact size piece- then use pieces to patch remaining slices.

6Bake in oven for 4 to 5 minutes until cheese is melted. Enjoy!
