This is like a vegetarian chili sauce. Not just for labor day. I love my relishes and I love my lentils! So here's a different relish to use on Your hot dogs! Its like a vegetarian chili dog, just top that veggie dog! So many uses for this relish, great on nachos ;) Enjoy!!

Ingredients For labor day lentil~pepper relish

  • 2 c
    lentils, cooked
  • 3
    chopped peppers red yellow and orange
  • 1 lg
    chopped onion
  • 1 clove
    garlic minced
  • 1 can
    chopped petite tomatoes 14oz
  • 2 Tbsp
    chili powder
  • 1 Tbsp
    cumin
  • salt & pepper
  • fresh cilantro

How To Make labor day lentil~pepper relish

    I do the quick soak cook lentils according to directions but instead of using water I use stock. For this recipe I use vegetable stock.

    In a frying pan soften onions, garlic and peppers in olive oil with salt and pepper. I also use these peppers and onions for toppings.

    When peppers and onions softened add can of petite chopped tomatoes, lentils and spices let simmer for a few minutes. Great hot or cold. Favorite way to eat is on top of a hot dog in place of chili. I also top salads cold! Next will use for nachos!
