this is a bean salad that can be served as an appetizer with baked tortilla chips. That makes it a two-way winner for the big game day. (or any day.)

Ingredients For hearty bean salad

  • 1 can
    black beans, drained
  • 1 can
    pinto beans, drained
  • 1 can
    kidney beans, drained
  • 1 can
    black eyed peas, drained
  • 1 can
    corn, drained
  • 1 c
    celery, chopped
  • 1 c
    onion, chopped
  • 1 c
    peppers, sweet-colored, chopped
  • MARINADE
  • 1/2 c
    apple cider vinegar
  • 1/4 c
    vegetable oil
  • 1/2 c
    sugar

How To Make hearty bean salad

  • 1
    Mix beans and vegetables in large container with cover.

    Bring oil, sugar, and vinegar to a boil and simmer for 2 minutes. Pour mixture over beans and vegetables. Refrigerate for at least 3 hours, stirring occasionally.

    Serve as a bean salad, or as an appetizer with baked tortilla chips.
