Even though it requires sitting overnight, this recipe is so easy to make. My mother made this all the time when I was growing up--it was one of her favorites and also my sister's. One caution: this salad should be very creamy, so you may need to adjust the dressing ingredients accordingly. Recipe & photo: recipes.wikia.com

How To Make cucumbers and onions

1Peel the cucumbers and slice thin. Layer in a shallow dish, sprinkling each layer with salt. Let stand overnight.

2In the morning, drain the cucumbers and rinse; let dry on paper towels.

3Slice the onions thin and mix gently with the cucumber slices.

4In a small bowl, beat together the mayonnaise or salad dressing, sugar and vinegar until creamy.

5Stir into the mixed cucumbers and onions.

6This dish should be creamy, so the dressing may have to be doubled if not creamy enough.

7Serve on a bed of lettuce with tomato slices on the side, if desired.
