This is such a light and refreshing dip - make sure to make a double batch because it goes fast. I like this with white corn chips.

Ingredients For donna's cucumber dip

1peeled & seeded english cucumber, finely grated

1 pkg(8 oz) cream cheese, softened

1 1/2 Tbsponion, grated

1/4 tspcayenne pepper (or more to taste)

1 tspdried dill weed (or more to taste)

3 Tbspmayonnaise

2 tsplemon juice

salt to taste

1drop green food coloring (optional)
How To Make donna's cucumber dip

1Peel, quarter and remove seeds from cucumber. Use a fine grater and grate the cucumbers.

2Drain all water from cucumbers, make sure no moisture is left. I put the grated cucumbers in several layers of paper towels and squeeze the liquid out.

3Mix all ingredients together and refrigerate at least 4 hours.

4Garnish with fresh dill leaf. Serve with pita or white corn chips.
