How To Make cucumber and yogurt soup with pine nuts

1Peel the cucumber, dice the flesh into small bite size pieces, set aside.

2Crush the garlic,3/4 cuo pine nuts, salt and pepper thoroughly using a mortar and pestle. Transfer the mixture into a large bowl and beat in the yogurt and diced cucumber. Add the water along with the lemon juice to taste.

3To serve, pour soup into bowls for soup serving, scatter over a few pine nuts, drizzle with olive oil, and garnish with fresh dill.
