We could not stop snacking on this simple corn and bean salsa. Sweet from the dressing, yellow pepper, and corn, but a bit salty from the Feta, it's simply delicious. Very easy to make, it's a great munchie.

Ingredients For corn and bean sweet chunky salsa

1 canwhite shoepeg corn; drained and rinsed (15 oz)

1 canblack beans; drained and rinsed (15 oz)

1yellow bell pepper, chopped

1/4 capple cider vinegar

1/2 colive oil
-
1/4 csugar

6 ozcrumbled Feta cheese
How To Make corn and bean sweet chunky salsa

1Mix vinegar, oil, and sugar until dissolved.

2Gently mix corn, beans, bell pepper, and vinaigrette. Refrigerate for at least a half-hour or until serving.

3Mix in Feta cheese right before serving. Salt and pepper to taste. Serve with tortilla chips.
