Every time we make mashed potatoes we have some left over. I usaly make potato pancakes with them. This time I wanted to try something different. This is what I came up with just before a football game. They were so good. Had none left over. I made these again yesterday. I added some shredded cheese and a diced onion They were even better.

Mix every thing together but the oil for frying. Make sure every thing is mixed very well. I then set this in the fridg for an hour,. Set the mashed potatoes out to come up to room temp. I use a deep fryer to make these. If you do not have a deep fryer. Use a large frying pan. Put enough oil to come up half way in the pan. Heat oil to 350. Do not over fill the pan with oil. It will spill out when frying... One teaspoon at a time drop mashed potatoes into the oil. (Do not put to many at a time. Oil will expand.) Cook till golden brown, turn and cook the other side till golden brown. Remove from oil and let drain on a baking sheet with a rack, let drain. I serve these with a Honey/mustard sauce. My boys just love these.
