Ingredients For bean salsa

  • 1 can
    pinto beans, drained
  • 1 can
    black beans, rinsed and drained
  • 1 can
    black eyed peas, drained
  • 1 pkg
    small package frozen corn
  • 1 jar
    2 oz. jar sliced pimientos with juice
  • 1
    medium red onion, diced
  • 1
    green bell pepper, chopped
  • 1 c
    chopped celery
  • FOR THE DRESSING
  • 1 c
    sugar
  • 3/4 c
    apple cider vinegar
  • 1/2 c
    canola oil
  • 1 tsp
    water
  • 1 tsp
    salt
  • 1/2 tsp
    pepper

How To Make bean salsa

  • 1
    Combine all the dressing ingredients in a sauce pan and boil until clear.

    Let the dressing cool a bit and pour over the bean mixture. Let sit overnight.

    Serve with Tostito Scoops
