Ingredients For watermelon scallop ceviche

1 cwatermelon puree (blend watermelon and strain – reserving juice)

1/2 cfresh lime juice

2 Tbspminced parsley

1 Tbspfresh lemon juice

1 Tbsppremium vodka, optional

1 Tbspminced fresh chives

kosher salt and freshly ground black pepper, to taste

1 lbsushi grade fresh sea scallops

rice crackers or crispy flatbreads, for serving
How To Make watermelon scallop ceviche

1Mix together all of the ingredients except the scallops in a glass serving bowl.

2Slice the scallops into 1/4-inch thick “coins” and drop into the dressing

3Cover and refrigerate for 2 hours, then serve with rice crackers or crispy flatbread.
