~ refreshing shrimp salad ~ cassies
I've been making some quick meals for my parents, while my mom is on the mend. I had some shrimp I needed to use up, so I used what I had in my fridge and it turned out delicious! It would be awesome served on a croissant as well, just chop up the shrimp. They are going to love this salad! Enjoy!

Ingredients For ~ refreshing shrimp salad ~ cassies

1/4 ceach - mayonnaise & miracle whip

1/4 cred onion, small chopped

1 tspdried dill weed

1 tsplemon juice

a fewgrinds sea salt & fresh black pepper

1baby cucumber, peeled and diced small - about 1/4 cup - if using a larger sized cucumber, remove the seeds

1 mdstalk celery - sliced

1 cmedium - large, already cooked shrimp ~ tails removed

Lettuceof your choice to serve it over

1Place all ingredients in a small bowl and mix well.

2Stir in the shrimp and toss to evenly coat.

3Serve over a bed of lettuce. Delicious! Could also chop the shrimp and this would be delicious served on a croissant.
