~ refreshing shrimp salad ~ cassies

I've been making some quick meals for my parents, while my mom is on the mend. I had some shrimp I needed to use up, so I used what I had in my fridge and it turned out delicious! It would be awesome served on a croissant as well, just chop up the shrimp. They are going to love this salad! Enjoy!

Ingredients For ~ refreshing shrimp salad ~ cassies

  • 1/4 c
    each - mayonnaise & miracle whip
  • 1/4 c
    red onion, small chopped
  • 1 tsp
    dried dill weed
  • 1 tsp
    lemon juice
  • a few
    grinds sea salt & fresh black pepper
  • 1
    baby cucumber, peeled and diced small - about 1/4 cup - if using a larger sized cucumber, remove the seeds
  • 1 md
    stalk celery - sliced
  • 1 c
    medium - large, already cooked shrimp ~ tails removed
  • Lettuce
    of your choice to serve it over

How To Make ~ refreshing shrimp salad ~ cassies

    Place all ingredients in a small bowl and mix well.

    Stir in the shrimp and toss to evenly coat.

    Serve over a bed of lettuce. Delicious! Could also chop the shrimp and this would be delicious served on a croissant.
