These take a little time but well worth it. They also make a very pretty presentation. I enjoy them and hope you do also.

Ingredients For fillings for the mini cream puffs

  • CHICKEN FILLING
  • 2 c
    chopped chicken
  • 1/4 c
    chopped celery
  • 2 Tbsp
    chopped pimento
  • 2 Tbsp
    dry white wine --optional
  • 1/4 c
    mayonaise
  • 1/2 tsp
    salt and dash pepper
  • fill cream puffs and enjoy
  • SHRIMP FILLING
  • 2 can
    (4 1/2 oz )baby shrimp drained
  • 2
    hard boiled eggs
  • 4 Tbsp
    finely chopped celery and/or chestnuts
  • 2 Tbsp
    lemon juice
  • 2 Tbsp
    chopped green onion
  • add enough mayonaise to moisten
  • HAM FILLING
  • 3 (4 1/oz) can
    deviled ham
  • 3/4 tsp
    chopped onion
  • 1 Tbsp
    horseradish, salt and pepper
  • combine and mix with enough sour cream to moisten
