This is such a great twist on a classic. I made this and think I will be making egg salad like this for now on. Every flavor pops in this simple recipe.

Ingredients For fall curried egg salad

  • 1/3 c
    mayonnaise
  • 1 Tbsp
    fresh lime juice
  • 11/2 tsp
    curry powder
  • 1 tsp
    dijon mustard
  • 1/4 tsp
    salt
  • 1 pinch
    cayenne pepper
  • 6
    hard boiled eggs
  • 1 c
    finely chopped granny smith apple
  • 1/3 c
    finely chopped red onion
  • 2 Tbsp
    chopped fresh cilantro (or more)

How To Make fall curried egg salad

  • 1
    Whisk together first 6 ingredients in bowl. Dice eggs, apples, and onion about same size. Chopped cilantro and add all to Mayo mix, stir to combine. Serve on Your favorite bread. I served open face with another pinch of pepper, for a lite lunch. Also is a great app!
