This is such a great twist on a classic. I made this and think I will be making egg salad like this for now on. Every flavor pops in this simple recipe.

Ingredients For fall curried egg salad

1/3 cmayonnaise

1 Tbspfresh lime juice

11/2 tspcurry powder

1 tspdijon mustard
-
1/4 tspsalt

1 pinchcayenne pepper

6hard boiled eggs

1 cfinely chopped granny smith apple

1/3 cfinely chopped red onion
-
2 Tbspchopped fresh cilantro (or more)
How To Make fall curried egg salad

1Whisk together first 6 ingredients in bowl. Dice eggs, apples, and onion about same size. Chopped cilantro and add all to Mayo mix, stir to combine. Serve on Your favorite bread. I served open face with another pinch of pepper, for a lite lunch. Also is a great app!
