These delicious little appetizers are a delcious, favorite way to start out a dinner.

Ingredients For muffin tin frittatas

  • 9 oz
    frozen asparagus, thawed
  • 4
    eggwhites
  • 1
    egg
  • 1/2 c
    grated cheddar cheese
  • 1/2 c
    chopped onion
  • dash
    seasoned salt, garlic powder and cajun seasoning

How To Make muffin tin frittatas

  • 1
    Spray a medium skillet with cooking oil spray. Add onion and thawed asparagus (cut in 1 inch pieces) Saute' until soft.

    Preheat the oven to 350'. Put liners in the muffin tins and spray them with cooking oil spray. Mix the egg whites and egg in a medium bowl and add the cheese and seasonings.

    Add the vegetable mixture and spoon into the muffin tins. Bake for 15 minutes or until set. Remove from tins when cool. Enjoy !
