My daughter had mentioned to me the other day how she uses avocado instead of mayo for her egg salad. I was having a friend over today for some gossip and wine. Decided to make some deviled eggs and had an avocado. So..... :)

Avocado deviled eggs are a nice twist on the traditional recipe. If you love avocados, you'll love these deviled eggs. The yolks and avocado blend together nice and smooth. Adding a bit of lime juice is the perfect zing. Very versatile, these are party perfect.

Ingredients For avocado deviled eggs

6 lghard boiled eggs, peeled
-
2 Tbspmayo
-
1/4 tspmustard (I used hot mustard)

1avocado, split and scooped out
-
1/2 tspparsley, finely choppd
-
1 tsplime juice
-
salt and pepper, to taste
-
paprika, for garnish

1Slice eggs lengthways and put yolks in a bowl.

2Put whites aside.

3Add to yolks, scooped out avocado, mayo, mustard, parsley, lime juice, salt, and pepper.

4Blend until creamy.

5Spoon this mixture into a small plastic bag with decorator pastry tip pushed into corner.

6Squeeze mixture into egg white halves or just spoon the mixture in.

7Then sprinkle with paprika. Chill for at least 30 minutes and enjoy.
