Ingredients For smoky bacon gazpacho

1 pkgapplewood smoked bacon

1 1/2 lbroughly chopped & core removed

1red pepper, roughly chopped & seeds removed

1cucumber, peeled & roughly chopped

1/4chopped sweet onion

1garlic clove
-
1lime juice
-
2 ctomato juice
-
1kosher salt
-
2red pepper
-
1 tspparsley
-
3 Tbspred wine vinegar
How To Make smoky bacon gazpacho

1Cook Baron until it is crispy. Rid it of any grease by patting it down on two with paper towels.

2Add tomatoes, pepper, cucumber, onion, garlic clove, lime juice, V8 (or tomato juice), olive oil, and herbs into a blender and blend until smooth.

3Now add the rest of the seasonings (salt, pepper, red pepper flakes, vinegar) slowly and adjust to taste.

4Let it sit for 24 hour and chill inside the refridgerator

5Garnish with chopped peppers, green onion, black pepper, and a drizzle of olive oil just before serving.
