Ingredients For spinach balls

16 ozpackage of frozen chopped spinach thawed & drained

1 boxcornbread stovetop stuffing mix
-
4 lgeggs
-
1/2 c(irish) butter or unsalted

1 mdonion finely chopped
-
1 cgrated parmesan cheese

1 dashsalt & pepper
How To Make spinach balls

1Preheat oven at 350F Melt butter in a large pan over medium heat. Add onion, cook 5 minutes until soft & translucent. Remove pan from heat.

2Remove excess water from thawed spinach by pressing it between two paper towels.

3In a large bowl combine the spinach, stovetop stuffing mix, parmesan cheese, eggs, onion, salt & pepper. Combine well.

4Line a baking sheet with parchment paper. Using your hands, roll the mixture to form individual 1~inch balls. Place each one on prepared baking sheet.

5Bake for 15-20 minutes of until very slightly browned. Serve with your favorite dip or sauce.
