With the holidays quickly approaching, we’re all searching for that perfect appetizer for our hungry guests. These Palmiers are easy peasy (lemon squeezy) to make, and the filling can be adapted to just about any combination… sweet or savory. I’ve made them with dark chocolate. And I promise that a plate or two of these on the sideboard are enough to keep your hungry guests at bay. So, you ready… Let’s get into the kitchen.

Ingredients For pancetta and three cheese palmiers

  • 6 slice
    pancetta, very thinly sliced
  • 3 oz
    feta or goat cheese, softened
  • 3 oz
    cream cheese, softened
  • 1/2 c
    parmesian, grated
  • 2 Tbsp
    fresh dill, finely chopped
  • 2 tsp
    fresh garlic, minced
  • salt, kosher variety, to taste
  • black pepper, freshly ground, to taste
  • 1
    puff pastry sheet
  • 1 md
    egg+ water
  • additional parmesan for sprinkling

How To Make pancetta and three cheese palmiers

    Gather your ingredients.

    Combine the cheeses, the dill and the garlic, and season with salt and pepper, to taste.

    Chef’s Note: If you have the time, let the cheese mixture rest at room temp for about an hour, to give the ingredients a chance to know each other.

    Defrost and layout a puff pastry sheet on a lightly floured surface.

    Use a rolling pin to slightly reduce the thickness of the pastry.

    Spread the cheese mixture over the puff pastry.

    Lay the pancetta slices over the cheese.

    Roll up on both short sides.

    Continue rolling until you meet in the middle.

    Cut crosswise into 1/4 to 1/2 inch thick slices (0.6 to 1.2cm)

    Chef’s Tip: To make the slicing easier, place the rolled pastry into the freezer for about 20 minutes. And don’t forget to use a nice sharp knife.

    While the palmiers are in the freezer, place a rack in the middle position, and preheat the oven to 400f (205c).

    Place the sliced palmiers on a parchment-lined baking sheet and spread about 1-inch apart (2.5cm)

    Mix the egg with two tablespoons of water.

    Brush with the egg wash.

    Sprinkle with some Parmesan cheese.

    Place in the preheated oven, and bake for 20 minutes, or until golden brown.
