pancetta and three cheese palmiers
With the holidays quickly approaching, we’re all searching for that perfect appetizer for our hungry guests. These Palmiers are easy peasy (lemon squeezy) to make, and the filling can be adapted to just about any combination… sweet or savory. I’ve made them with dark chocolate. And I promise that a plate or two of these on the sideboard are enough to keep your hungry guests at bay. So, you ready… Let’s get into the kitchen.

How To Make pancetta and three cheese palmiers
-
1Gather your ingredients.
-
2Combine the cheeses, the dill and the garlic, and season with salt and pepper, to taste.
-
3Chef’s Note: If you have the time, let the cheese mixture rest at room temp for about an hour, to give the ingredients a chance to know each other.
-
4Defrost and layout a puff pastry sheet on a lightly floured surface.
-
5Use a rolling pin to slightly reduce the thickness of the pastry.
-
6Spread the cheese mixture over the puff pastry.
-
7Lay the pancetta slices over the cheese.
-
8Roll up on both short sides.
-
9Continue rolling until you meet in the middle.
-
10Cut crosswise into 1/4 to 1/2 inch thick slices (0.6 to 1.2cm)
-
11Chef’s Tip: To make the slicing easier, place the rolled pastry into the freezer for about 20 minutes. And don’t forget to use a nice sharp knife.
-
12While the palmiers are in the freezer, place a rack in the middle position, and preheat the oven to 400f (205c).
-
13Place the sliced palmiers on a parchment-lined baking sheet and spread about 1-inch apart (2.5cm)
-
14Mix the egg with two tablespoons of water.
-
15Brush with the egg wash.
-
16Sprinkle with some Parmesan cheese.
-
17Place in the preheated oven, and bake for 20 minutes, or until golden brown.
-
18Serve while still warm. Enjoy
-
19Keep the faith, and keep cooking.
