I made this on a whim on the way out to a party and this is what I had in the cabinets. It came out really well and all of the "dudes" even enjoyed this healthy vegetarian dip!

Blue Ribbon Recipe

Sometimes dips can be heavy, but this layered dip is fresh and light. Super easy to make, we really liked each layer of the dip. Black beans and melted cream cheese are the base. A layer of salsa and a quick guacamole add tons of flavor. Lettuce on top gives it great crunch. Fantastic game day snack.

Ingredients For game time dip

  • 2 can
    black beans (15 oz each)
  • 1 pkg
    cream cheese, low-fat (8 oz)
  • 1/2 c
    shredded cheese, your choice
  • 6
    romaine leaves, chopped
  • 1 c
    salsa
  • taco seasoning
  • QUICK GUAC
  • 2
    avocados, ripe
  • 1 clove
    garlic, minced
  • 1/4
    lime
  • 1 Tbsp
    sour cream, fat-free

How To Make game time dip

  • Black beans and cream cheese mixed together.

    Rinse and drain black beans. Put them into a pot and melt the cream cheese. You're looking to coat the beans, making sure the cream cheese lumps have disappeared.
  • Black bean mixture in a baking dish sprinkled with shredded cheese.

    Once the lumps are gone, spread the bean mixture into a shallow dish and spread your shredded cheese around. (I used the taco blend and mozzarella mix because that's what I had on hand.)
  • Taco seasoning sprinkled on top.

    Sprinkle on your taco seasoning. DON'T use more than 2 tablespoons, as this is high in sodium. I mostly use 1 tablespoon.
  • Layer of salsa added to the dish.

    Place some dollops of salsa around the layers that are forming.
  • Quick guacamole spread on top.

    Then make this quick guac below and also place dollops around. Take the two ripe avocados and mash with the minced garlic clove. Add a squeeze of 1/4 lime and tablespoon of sour cream.
  • Chopped romaine added to baking dish.

    Once you have added the salsa and guac, place the chopped up romaine around ontop of the dip and serve with tortillas!
