crab melts
I needed to come up with a fun open faced sandwich for a baby shower and this was the result! I cut the larger slices into small pieces so they could easily fit on plates with veggies and fruit. Big success!

Ingredients For crab melts

8 ozcream cheese

16 ozimitation crabmeat, chopped

1/4 ccocktail sauce

1/4 csour cream
-
2 Tbspmayonnaise

1 Tbsplemon juice

1 tsphorseradish sauce
-
2 ccelery, chopped
-
4green onions, thinly sliced
-
dried garlic flakes
-
coarse ground pepper
-
olive oil
-
1 cshredded parmesan cheese
-
1 cshredded mozzarella cheese
How To Make crab melts

1Place cream cheese, cocktail sauce, sour cream, mayo, lemon juice and horseradish in a food processor and blend till smooth.

2In a mixing bowl, gently combine the cream cheese mixture, chopped imitation crab meat, chopped celery and sliced green onions. Set aside.

3Spread slices of your favorite artisan bread with olive oil and sprinkle with dried garlic flakes. Place bread directly on the oven racks and toast the bread at 350 degrees till just slightly crispy. Remove from oven.

4Place toasted bread on cookie sheet. Spoon mounds of crab mixture onto the bread and sprinkle with pepper and both types of shredded cheese.

5Change oven setting to broil and place cookie sheet in the center of the oven. Broil for 4-5 minutes or until cheeses melt. Enjoy!
