1 Delicata squash, seeded and diced (you can leave the skin on)

2 sprig fresh thyme
salt and pepper

1 shallot, minced
1 tsp Dijon mustard
2 Tbsp apple cider vinegar
1 tsp finely chopped fresh rosemary
