INGREDIENTS

1 medium onion
•
2 tbsp olive oil
•
1 bell pepper (yellow or red go well but any will do)
•
2 cloves garlic (0.5 tsp dried garlic)
•
2 cm ginger (1 tsp if using dried)
•
1 tsp dried cinnamon (or 1 stick)
•
1 tsp cayenne pepper
•
750 ml hot veggie stock
•
2 large sweet potatoes (approx 300 g. each)
•
Half a cup tomato puree or 1 cup fresh chopped tomatoes
•
2 large tbsp peanut butter (crunchy or smooth both work, or make your own in 5 mins here)
•
2 tbsp maple syrup (you can also use honey, but then it won’t be vegan of course)
•
2 tbsp soy sauce
•
2 tbsp vinegar (any sort, lemon juice can also be used instead)
•
Salt and pepper for taste
•
1 tsp pepper
•
1/2 lime, juiced (great if you have it, don’t worry if you don’t)
•
Peanuts to garnish
•
Go a bit wild with the herbs - make it your signature dish by throwing in any and all of the following herbs that you have: basil, parsley, coriander, oregano
•
Use roughly half a cup of each if using fresh, or 1 tbsp when using dried. Dried herb mixes like ‘herbes de provence’ are also any easy choice here.
