Almond Granola with Dried Fruit

INGREDIENTS
1/3cup maple syrup
1/3cuppacked (2 1/3 ounces) light brown sugar
4teaspoonsvanilla extract
1/2teaspoon salt
1/2cup vegetable oil
5cups old-fashioned rolled oats
2cups(10 ounces) raw almonds, chopped coarse
2cups raisins or other dried fruit, chopped
Makes about 9 cups
Chop almonds by hand for superior texture and crunch. If you prefer not to hand chop, substitute slivered or sliced almonds. (A processor is lousy at chopping nuts evenly.) Use a single type of dried fruit or a combination. Do not use quick oats
